From the outset, the colour is attractive, with great clarity and brilliance, the serine yellow colour with green hues confirms the concentration of the Chenin grape variety but also its preserved Loire freshness. The nose is very expressive, it is both powerful and complex. The fresh aromas of William pear are first delivered, then the flowers take over, to finish with the delicate aromas of ageing (woody, vanilla...). The palate remains fresh and supple on the palate, then gradually its power and roundness are perceived, which take hold for a long time thanks to a maturing and malolactic fermentation perfectly controlled in French oak barrels.
This cuvée combines citrus fruits, quince and woody notes on the nose (one year ago). The palate is just as pleasant: supple, full and velvety, well balanced between freshness and sweetness.
Ideal from now on but also up to 5-7 years old.
This cuvée will go well with fish or shellfish, accompanied by a creamy reduction sauce, fried scallops, fried foie gras accompanied by cooked white fruits, white meats with cream sauces, veal sweetbreads, truffled white pudding. Or hard cheeses (comté with 24 or 36 months of maturing, old mimolette...).
