The eye is a brilliant yellow gold. The nose is marked by white fruits and a delicious and gourmet note of ripe stone fruit and plum plum. There is also a subtle hint of almond and a finely toasted touch. The attack is clean, full-bodied and reveals aromas of deep, slightly toasted white : fruit with flesh. We find the subtle, light almond. The mid-palate is carried by a very nice acidity that carries very long the end of the mouth. Infinite caudalies....
The aroma of the first nose reminds me of my grandmother's mirabelle plum pies
You can, like me, prefer it in its first 3 years for its freshness and complexity and fine hints of toast. Potential for 5 years of ageing.
Serving temperature 10° to let the aromas reveal themselves.
Or serve at 8° in the glass and let the wine open very slowly
To be served with fine dishes. Why not a carpaccio of scallops, citrus fruits and yuzu, with grated Kumquat. It will go very well with a poulard with cream and morels. For our fish lovers a trout with almonds... Enjoy your meal!
J'adore ces pointes d'amandes grillées, de mirabelles ou de compotes de reines-claudes. Quel délice, j'adore cette cuvée sur une truite aux amandes, une cote de veau à la creme (meme de coco) et au champignons pleurotes, un poulet rôti, une salade périgourdine, un filet de bar et sa sauce beurre blanc.
