The rosé wines of Faugères in the Languedoc are to be preferred for a royal couscous, they will bring the essential sweetness to this spicy dish. Fish couscous and 7 vegetables will go perfectly with a Saint-Chinian wine, always in the Languedoc, while very spicy couscous such as lamb brochette couscous will go best with a very fresh Provence wine.
