Riesling 2022 - Domaine de l'Envol

"Riesling is one of my favorite grape varieties! It can be the perfect reflection of its terroir when it is well worked by the hands of its winemaker. This is the case for this cuvée from Domaine de l'Envol, which is one of my favorite Rieslings, especially for its authenticity. Really, go with your eyes closed (and your other senses wide open)!

This dry white wine comes from the beautiful Alsatian terroirs near Colmar. Its tension and salinity will be its assets to accompany a nice seafood platter or smoked fish. I advise you to drink it in its youth at a temperature of 10-11°C. Its bouquet will evoke notes of citrus, white flowers and orchard fruits. It is a very digestible wine. It calls for aperitifs between friends that may extend your long evenings of reunion, as this wine is fresh and juicy.

Crémant Brut Nature - Domaine de l'Envol

My family was totally won over by this wine, which I had the opportunity to serve as an aperitif at a New Year's meal. But you don't have to wait for a big event, this wine is ideal for any occasion. Don't hesitate to put a bottle in the fridge right now!

The Alsatian vineyard has not much to prove in the quality of its crémants. The Domaine de l'Envol has chosen a very nice niche by producing an "brut nature" bubble.

"The blend of Riesling and Pinot grapes is fully expressed, thanks to the absence of added sugar. The finesse of the bubble will accompany you in your aperitifs and I advise you to try it with some pretzels and cold cuts. I also like to pair this wine at the beginning of a meal with parmesan cookies and some well-seasoned fish tartar. For the service I recommend wine glasses and a temperature close to 10°C!"

Gewurztraminer Macération Letzenberg - Domaine de l'Envol

"I recently served it at the restaurant where I work to accompany a hot starter around a Jerusalem artichoke brioche, seasoned with a Jerusalem artichoke juice fermented with yellow wine. A delight!

But don't worry, you don't have to serve it with a "gastro" starter to make it stand out!"

"The Domaine de l'Envol adopts a working philosophy that is as respectful as possible of its environment and its people, according to biodynamic methods. I am very sensitive to this and I find that it is really felt in their wines. This cuvée is made from an emblematic grape variety of Alsace: Gewurztraminer, which offers a dry white wine, spicy, with aromas of roses and lychee. The richness and bitterness on the palate counterbalance its freshness and allow for daring pairings: for example, with sweetbreads, poultry in cream and mushrooms or a nice cheese platter. This wine is a real experience that every wine lover should try!"

Clément Delécluse, Best Young Sommelier of France 2021

Clément Delécluse is one of those people who know how to unearth rare pearls in confidential domains, to identify the star winemakers of tomorrow and to speak wonderfully about the content of our bottles.

Best Sommelier Apprentice of France in 2016, then Best Young Sommelier of France in 2021, at only 28 years old, this young Ch'ti already has a great record of achievements that could make more than one person swoon!

But he remains humble, because these competitions are not an end in themselves, they are just challenges that he sets himself to perfect his knowledge of wine and to surpass himself. His meeting with a passionate teacher was an obvious choice and started his beautiful story with sommellerie.

At the age of 17, Clément embarked on his adventure and worked in various Michelin-starred establishments in France, between Bordeaux, Alsace, the Vendée and Savoie. He had the chance to meet Gérard Basset, Best Sommelier of the World in 2010, who would later become his mentor. Today, Clément is back on his native land and works at the Empreinte restaurant in Lambersart.



In his young - but already busy - career, Clément has developed an ability that we all envy him: knowing which wine to drink and what to pair it with. The choice that one would not have thought of but which makes all the difference by its originality and its personality. So we asked him for some advice... With fish in sauce? A Chablis. With beef? A Marsannay. With lamb? An old Gigondas. With a chocolate dessert? A Rasteau, a natural sweet wine. With a fruit dessert? A Jurançon in its youth.



But above all, Clément's heart is always set on wines that reflect their terroirs, that respect their environment and the people who work there. Chances are, he'll make yours capsize!
