The domain's short story
At the end of a long search, Toni Schuler, oenologist and wine enthusiast, made a final visit: the Bergerie de Fenouillet. He convinced me to join him in the restructuring of the estate, an ambitious project and a real human adventure. The objective, from the start, was to preserve and enrich the biodiversity of the place, while respecting its balance. The Fenouillet wood sector, which offers the best potential, was replanted. In the pine forests, I climb to the tops of the trees, to indicate to Toni, equipped with bamboos, where to mark out the plots to be cleared. In the middle of the woods and the garrigues, our vines do not receive any herbicide. To welcome the grapes with dignity, we build the cellar, all in stone and semi-buried. It hosts tanks, tuns and barrels in optimal conditions. The adoption of animals naturally follows, and the start of polyculture.
