Belle découverte pour un soir de réveillon pour accompagner fruit de mer et truite fumée

Nous avons acheté cette cuvée directement au domaine. C'est mon coup de coeur. Un vin qui met en avant toute la typicité de son terroir avec de belles notes fraîches et minérales au milieu d'un ballet de fruits blanc comme l'abricot, la pêche et la gelée de coing. Le long élevage de 18 mois en fut de chêne neuf met en avant de belles notes empyreumatique (fumée, miel, vanille, réglisse, bois...)
Le tout est harmonieusement mis en valeur. Une très belle bouteille.

Anecdotes about the domain

Wine has no boundaries: it is a sharing, a meeting, a conversation, an exchange, an accompaniment with a dish, a color, an emotion, a joy, a birthday, friends, buddies. That's what wine is, a passionate story without end. This vineyard presents rare and appreciated qualities, and Hervé has known how to magnify his domain by reaching a beautiful harmony on the whole of his wines whose complexity remains accessible to all.

The domain's short story

Hervé has been immersed in the vineyard since his birth, following in the footsteps of Jean-Paul, his father. Hervé has continued the traditional production while bringing in his own discoveries and especially his wine expertise with new vintages. In love with wine, his estate, the life of the vine and the land, Hervé recognizes that it is above all necessary to pamper and adapt to the vine rather than trying to tame it, to control it. This is what makes Château Bellevue a wonderful terroir full of generosity.

The winemaker's pride

Since 1995, and after four generations of winemakers, Hervé Tijou likes to share the tradition, the passion of wine. Anne joined him so that all the curious customers of the estate can discover the rich heritage of the village of Saint-Aubin-de-Luigne on the banks of the Layon, or go and see the plots of land, the one in Savennières, which plunge into the Loire on a schistose sandstone soil. Château Bellevue dominates the panorama of the hillsides. What a working environment! The vines are cultivated in the good sense of the reasoned culture, that is why they age well and bring with the fruit, the taste of the soil and gives finesse to the wines. Château Bellevue offers a wide range of dry white wines (Anjou blanc, Savennières) as well as red wines (Anjou Gamay) and rosé wines (Rosé de Loire, Rosé d'Anjou, Rosé Cabernet Anjou) or even sweet wines (Coteaux du Layon, Coteau du Layon 1er Cru Chaume)!
