A few kilometres from the Canal du Midi, Château Cabezac and its ochre bastide with blue shutters guard the entrance to the village of Bize-Minervois. Everything here has been designed for and around the vine. The Domaine was born from a love affair between the Dondain family, wine and the terroirs of the Minervois. A land of contrasts, with many facets, that has always fascinated the owner, Gontran Dondain.
Convinced of the strong potential of the vineyard, with his daughter Stéphanie, he continues to improve and modernize it in order to restore all its letters of nobility to a land long underestimated. Today, the estate has 65 hectares of vines classified as AOP Minervois. These vines flourish on three magnificent terroirs of the appellation, terroirs that are both singular and complementary for the elaboration of the vintages.
Seduced by the beauty of the region, a land steeped in sunshine and history, Gontran Dondain, a former agri-food leader, has long been in love with wine culture. As soon as he was able, he acquired Château Cabezac, an estate that was in peril, to live his passion full time. He began to transform his vines, his motto always in mind: good wines begin in the vineyard.
In 2004, his daughter, Stéphanie, joined him and took over the marketing and sales management of the estate. Together, they created the beautiful collection of wines produced by the Domaine and a place entirely dedicated to the world of wine in the broadest sense. Château Cabezac is an oenotourism and gourmet destination where everything is done to provide visitors with unforgettable moments in a preserved natural environment.
"What transports me to this wine world are also these men, those who develop the region through their know-how in the vineyard but also through their creativity in marketing. All these winegrowers, generally iconoclasts, who transgress the rules by making extraordinary wines, including with varieties not recognized by the appellation."
"The wine I make and which most resembles me is the Belvèze cuvée. It is a complex wine that has a lot to say! Everyone can also find qualities of their own. It is a senior wine that improves as it ages! "
