the winery seeks above all to produce authentic wines that are as natural as possible, respecting both the environment and human beings:
In the vineyard, a great deal of prophylactic work is carried out upstream: working the soil under the row, grassing, lifting the foliage, aeration of the grapes to avoid disease and promote maturity. Vine treatments, using Bordeaux mixture (copper) or sulphur, are carried out only if necessary and in very small quantities (doses 4 times lower than those authorised in AB).
In the cellar, the native microbial fauna is favoured. Apart from adding a little sulphite at the bottling stage, no inputs are added.
Thus the wines remain digestible and representative of a terroir, a vintage, a grape variety...
In 1993, Mrs Defforey, owner of the château, set up a wine-growing estate producing Savoy wines. The current winegrower, Christophe Martin, took over the management of the estate in 2010. Passionate about his work, Christophe attaches great importance to respect for the soil, the vine, the wine and the people. Thus, to stand out from the other winegrowers in the area and work in accordance with his convictions, he asked in 2012, the conversion to Organic Agriculture.
Agriculture has an important impact on the common good: natural environment, landscape, rurality, public health, social cohesion... Having a great interest in nature and life in general, the main part of my work as a winegrower is therefore to reduce my ecological footprint as much as possible, to produce my wines in a sustainable and ethical way while thinking above all of consumers, workers, neighbours, friends, future generations...
