Château d'Esther is located in Saint-Loubès, on the edge of the Dordogne, a vineyard of 5.42 hectares, grown organically (certified Agrocert) and biodynamically (certified Demeter). But also a country hedge, fruit trees (about 200 peach trees, plum trees, apricot trees...) planted along the plots, nesting boxes (120 nesting boxes that attract about twenty species of birds), hedgehog houses, hives, a farmyard. "In May 2001, when I arrived from my native Germany twenty years ago, and from the Paris region a year ago, I unearthed this small five-and-a-half hectare estate and fell under the spell of this site, which was perfectly suited to what I wanted to do to settle in the wine business. As soon as I bought it, as soon as I started to transform this conventional farm into an area in which I could implement my ideas of "culture", under all its meanings. Farmers working in organic farming, "elders" came to my aid to implement the conversion of my vineyard, and passed on their cultivation and winemaking techniques to me. I was then able to make my own choices, with the essential concern of respecting traditions and the environment, and I also chose to bring into my work my passion for painting and especially abstract painting by meeting several painters from the Bordeaux region. Every spring, the natural reserves that border the property ensure our collection of horsetail, St. John's wort, comfrey,... that we use in herbal teas and liquid manure... These treatments are truly effective and contribute greatly to the proper balance and growth of the vines and fruits. The perfect maturity of the grape at harvest produces a wine with a very low natural acidity. This allows us to provide a very low quantity of sulphur, well below the authorised doses in organic and biodynamic viticulture. Fermentation starts quite quickly, thanks to indigenous yeasts (naturally present on the skin of the grapes). We do not add any products (yeast, gum, acid...)
