Château Fontainebleau is located in the commune of Val, in the Haut Var. Between Cotignac and Brignoles, in the heart of green Provence, we cultivate 27 hectares of vines on an estate totalling more than 150 hectares. On this estate, there is forest but abundant water: springs, waterfalls and rivers.
The vines get the nutrients they need from the so-called red pelite soils, a soil rich in minerals that gives all its character to the wines produced there. I like to call my vineyard the amphitheatre because of its shape. This appearance gives it microclimates of softness and even freshness, which is a real advantage in view of the heat that can be recorded in the region.
Our Provence wines are produced in AOP Côtes de Provence in red, white and rosé. The main grape varieties that occupy the vineyard are Grenache, Cabernet Sauvignon or Vieux Carignan, not to mention all of them.
At the estate, we are hyper-sensitive to the nature around us and especially the one we have on the estate. To protect this terroir, we manage our vineyard in biodynamic way and the result is very satisfactory.
Château Fontainebleau is a land that has long been forgotten and a neglected land. Today, Jean-Louis Bouchard, owner of the estate and its vineyard since 2009, is reviving the potential of its 150 hectares of ashes.
In 2013, he entrusted Valérie Courrèges, an oenologist by training, with the operational management of the estate: from wine production to biodynamic viticulture techniques. Together, they produce organic wines full of sunshine!
Biodynamics means the preservation of animal species that have taken up residence on the estate. To go even further, Jean-Louis and Valérie allow you to discover the estate from another angle: by horse-drawn carriage!
