We are in Indre et Loire between Tours and Saumur. Each appellation has its own terroirs: Bourgueil: Gravel soils (known as Galichets), limestone soils (tufs), siliceous claysChinon: limestone soils (tufs)Vouvray: flint clay soilsOur philosophy of organic and biodynamic cultivation with the balance of soils and plants respects our ignoble old vines carefully preserved. We opt for the replacement of missing wines by mass selection with a limited treatment adapted to climatic conditions, manual harvesting at maturity in crates with meticulous sorting, vinification with natural indigenous yeasts only, by carbonic maceration or destemmed harvestThe wines are non-filtered, with little or no sulfiting at bottlingThe slow ageing in vats or wooden barrels chosen to correct the tannins.In short, the know-how of the craftsman is based on the knowledge of our terroirs
