(37) Indre-et-Loire

We are in Indre-et-Loire between Tours and Saumur. Each appellation has its own terroir.
Bourgueil : gravel soils (called Galichets), calcareous soils (tuffs), siliceous clay soils.
Chinon: chalky soils (tuffs)
Vouvray: flinty clay soilsWe
cultivate our vineyard following the philosophy of organic and biodynamic farming. We take into account the balance of the soil and plants, respecting our preserved old vineyard. We opt for the replacement of missing or damaged vines by massal selection with a limited treatment adapted to the climatic conditions.
As far as human intervention is concerned, the grapes are harvested when they are ripe, by hand and carefully sorted into small boxes. We vinify with natural indigenous yeasts only, by carbonic maceration or by destemming. Our wines are unfiltered and there are very few, if any, sulphites added during bottling. In summary, the know-how is artisanal and is based on the knowledge of our terroirs.

Our story

In 1985, Pierre made his first wine, in 1989 Catherine and Pierre took over 6 hectares of Chinon, in 1990 we converted the vineyard to Organic and Biodynamic Agriculture. In 1992, Pierre dared to vinify and bottle the wine without using air: "Nuit d'Ivresse" was born. Between 199 and 2002, Catherine vinified her first Vouvray under the label La Dilettante.
