The Domaine Chibaou vineyard of 70 ha is located on the hilly lands of the Entre Deux Mers with a clay-limestone clay and limestone soil. For Christophe Rebillou, the winemaker/owner, "wine is a family story" and his universe since his parents, grandparents and great-grandparents have all been involved in it before him. In 2005 Christophe set up as a winegrower on 5 ha belonging to his parents who were working their vines for the cooperative cellar. The Domaine is named Chibaou, which means horse in Gascon patois. A nod to his wife's passion for horseback riding, as well as a tribute to his great-grandfather, a former coachman and farrier from the Dordogne who was the first to work the family vineyards. Pioneer of organic farming in the entre deux mers region, he started to work in organic agriculture in 2009.
The story begins in the early 1900s, when my great-grandfather, a coachman, decided to try his hand at the gold rush, French style! He left his native Dordogne and, after a long journey of at least 50 kilometers, arrived in the Gironde, where he fell in love with the rolling landscapes of the Entre-deux-Mers region, the smell of blooming vines... or perhaps the beautiful smile of Madeleine, whom he met at the Pellegrue ball and married a few years later! They both settled in Castelviel: these were the first steps of the estate. My grandfather Robert, then my father Bernard, modernized and developed it. 100 years later - or so - I arrived! I spent a few years studying wine, management, and a few other things... I worked in the Languedoc to teach them how to make wine - or the other way around, I don't know -, spent 2 years in the United States to perfect my English and my diet. Then in 2005, I returned to the domain. There are then 40 hectares, still in cooperative cellar, which is already good, but I would like to make wine! So we bought 4 vats, a small press and a pump... and off we went on 5 hectares! We made our first wine, Château Grenet 2005, and "beginner's luck" - it won a medal at the Bordeaux competition. There are still a few bottles well hidden, so let's hear it...
Domaine Chibaou is three châteaux: Château Grenet, the historic one, on the clay-limestone slopes of Castelviel. The family home and the first plots bought by my great-grandparents at a place called Belair, on one of the highest points of the Gironde. Château Beyran, a plateau overlooking the Dropt valley at Saint Félix de Foncaude, was bought by my parents in the 1980s. Château Fontaine Fleury in Saint Laurent du Bois is the new kid on the block, bought in 2016 to develop the equestrian activity with Emilie. On some thirty hectares of vineyards and meadows, we have built boxes, a career and a riding arena to accommodate ponies and horses for teaching or breeding.
