In Beaune, Domaine Debray has been practicing sustainable viticulture since its installation in 2006. Sustainable management only treats vines against diseases or pests deemed necessary, in fact some treatments only correspond to one region, using it elsewhere makes no sense. An intervention is decided after an observation and it is often not applied to the whole estate, only a few plots.
Winegrowers who practice reasoned control do not aim for zero disease, it is an objective that is too polluting and often useless. The objective is to find a balance so that this does not alter the quality of the grapes without eliminating any foreign matter. This process is longer but it is also more logical and responsible. A small commitment to reduce pollution and not to damage the soil.
For the vinification, Domaine Debray ferments the whites and then matures in oak barrels. To benefit from the regional appellations, some are raised in vats! The alcoholic fermentation period lasts from 4 to 6 weeks. To reduce the acidity of the wines, a malolactic fermentation is then carried out.
A maturing period of about 12 months then begins, depending on the appellation and vintage. For the reds, the bunches macerate for a few days and the vatting then starts for about 15 days. We proceed with a few punching down and pumping over so that the taste is there.
Then, pressing and blending and the wine obtained is put into barrels between 14 and 18 months. We glue the wine and bottle it! Then it is ready to be tasted!
Yvonnick Debray is not the son of a winegrower, he is not from a wine-growing region and he finally succeeded in this environment! Work and passion are the reason for this success!

His passion for wine has been for several years already a guide in his professional choices since for about twenty years he was living in the Paris region. He has been a distributor for Burgundy wines at all the major French wine fairs.
However, in 2006, Yvonnick changed course and settled in Burgundy where he acquired a vineyard. Above all, he wishes to share his passion, show his cellars to the curious and carry out tastings of the estate's various vintages to finally present his own wines.
