To make wine is to deliver a part of oneself... because the soil and the vines that grow there do not lie. The estate is located in the Centre Val de Loire, in the Nièvre, in an AOC zone. They have chosen not to claim it in order to keep a certain freedom of expression in the conduct of our vinification.... One wine, one winemaker! Thanks to this, their sauvignons are ripe, fruity and gourmet...
Anecdotes about the domain
Burgundian farmers and cousins of Champagne winegrowers, it is thus quite naturally that we ended up becoming them too! We met beautiful people who knew how to bring us experience in this field but especially ambition... because to want to arrive, it is already to have made half of the way.
The domain's short story
We took over this small organic domain last year and we offer you our very first ripe and tasty wines. Our challenge is to make our domain recognized through the purity and the originality of our wines. We don't want to hide behind an AOC to justify the quality of our production but to offer you "great" table wines.
The winemaker's pride
Our domain is located in the Centre Val de Loire, in the Nièvre region, in the AOC zone. We have chosen not to claim this one in order to keep a certain freedom of expression in the conduct of our vinifications... One wine, One winemaker ! Our vines are cultivated in the respect of the specifications of the organic farming. We work our soils in particular by animal traction. The harvest of low yields is done manually with a sorting basket by basket. We keep only the ripe grapes that we would eat. The vinification must be the simple expression of the terroir, so we do not use industrial yeasts (only the indigenous yeasts naturally present on our grapes), no addition of sugars, or glues. This year, only a filtration and a moderate sulfiting were practiced.
