Winegrower from father to son for several generations, it was in 1999 that we decided to create our own cellar, "Les Aphillanthes". The farm is located on the plateau of the Plan de Dieu (Commune de Travaillan), on the garrigues of Sérignan, and on the commune of Rasteau, between Orange and Vaison la Romaine (Sud de la France). The vineyard consists of 50 ha, planted with Grenache of an average age of 55 years, Syrah of 35 years of Mourvèdre, old Carignan of 70 years, Cinsault, Viognier, Roussanne and Clairette on a clayey-limestone soil covered with pebbles brought several centuries ago by "l'Ouvèze". The vines are traditionally cultivated, without weeding, with tillage, disbudding, green harvesting on plots that are too productive, the treatments and amendments are natural (no insecticides or synthetic fertilizers). Throughout the year our work is carried out according to the rhythm of the seasons and the moon that guides us in our tasks. A year of listening and passion to harvest quality grapes. Harvesting is manual. A selection of parcels is made, and the grapes picked are carefully sorted to bring the best of the harvest into our cellar.

Our story

Since 2003, the vineyard has been entirely worked in Bio-Dynamics. The two-storey cellar has been designed to use gravity. The basement is entirely made of stone blocks (Pierres du Gard) in order to keep a constant hydrometry and temperature for the ageing of the wines in barrels and concrete vats. On the ground floor a set of concrete tanks equipped with a temperature regulator for vinification and a large trapdoor to facilitate manual punching down. And finally an air-conditioned bottle storage room. The vinification is carried out on grapes sorted by hand, they are destemmed, crushed and placed in vats. During the fermentation period, the grapes are picked and pumped up every day. The vatting period can be up to 35 days. The Domaine's vines have been managed naturally without weedkillers, insecticides or synthetic fertilizers since 2003. Certified Organic and Biodynamic Agriculture since 2007.

It is a state of mind and a constant questioning in order to extract the best from each harvest. The passion for this profession has always pushed us towards this philosophy.

We are constantly looking for balance in our wines, and we are aware that the diversity of this fabulous terroir is an opportunity!
