The new Don(n)e is a small estate (8 ha) located on the slopes of the Col de la Done, at the end of the commune of Calce, about twenty kms west of Perpignan. Particularly wild, the site brings together all the elements necessary for the production of wines with unique profiles: high altitude plots, northern faces, a slightly evolved schistose soil. The latter is naturally deficient in potash, which provides the essential material to produce fresh, mineral and gourmet wines in southern latitudes. On the other hand, and since we cannot have everything, the artisanal structure and the poverty of the soil are at the origin of low harvests, 15/20 hL/ha in the best years.
The historical plots of Clot de l'Olby were saved from grubbing-up in extremis, only a few days before their scheduled end. The first pruning was very difficult because of the grafting operations that, with time and lack of maintenance, had colonized all the stumps to form a dense and terribly resistant mesh on the ground. The cleaning and restoration was long and tedious with a work rate of about fifty stumps per day.
Decided by oenology (my first profession) but above all by the use that is made of it, the estate was built on the Burgundian desires of Pinot (first steps at Meo-Camuzet in Vosne) but with a southern terroir. For several years now, the emphasis has been on a low interventionist wine production, because it is by letting our vineyard express itself that it gains in sincerity and typicity.
Certified in organic agriculture since its creation (2007), the estate has been committed since 2011 to the path of natural wines where interventions are minimalist and the SO2 rate is voluntarily kept very low. Result? Fresh and marine wines, digestible and fruity. This trend towards more simplicity really makes it a trademark on our estate. Over time, some of the classic interventions have been reduced to their minimal form of expression, others simply cancelled in order to move towards purer, simpler, straightforward, natural wines.
