"Pauline is from Finistère and Laurent Savoyard, they met in an engineering school (INSA) and nothing predestined them for vine growing. After their studies they worked for a year as engineers and then decided to grant themselves a year of professional and personal development, which took the form of a trip to Australia. They work in a winery on the west coast of Australia and discover the professions of vine and wine. This experience is a revelation for their future: working outside, touching the living, giving meaning, they put themselves in the lead one day to produce their own wine. The machine is set in motion: Pauline resumes her studies as an oenologist in Dijon while Laurent travels the Alps as a ski instructor, both of whom are trained in different wine-growing regions: Saumurois (Domaine Mélaric), Bordelais (Château La Tour de By), Roussillon (Domaine Le Soula). They discover the magic of the Loire with its great sincere and lively wines produced on limestone, but they also and above all discover an extraordinary and more than precious mutual help from the winegrowers!And it is therefore in Puy-Notre-Dame in the Saumur that the birth of L'Austral was quickly realized following a chance meeting in 2016; Françoise and Philippe Gourdon (Château Tour Grise) ceded 5 ha of vines cultivated in biodynamic agriculture to them on a farm. 2 distinct types of soils coexist in Puy-Notre-Dame: the tufa chalk of Turonian and Jurassic flints. Austral cultivates 2 ha of Chenin and 3 ha of Cabernet Franc, the vinifications are made with indigenous yeasts, without exogenous inputs in order to reveal as well as possible this very particular terroir.
We are not going to lie to you, we are still very young in the business since 2016 is our first vintage! We promise you, we put a lot of love into it! We have many ideas, a multitude of desires and very few certainties! Wine constantly puts us back in our place, it is, we think, the word of modesty... These are beautiful encounters that have led us to make wine today, these winegrowers who respect the soil, the environment and the human being. It is therefore our duty to do the same: to succeed in making sincere and lively wines, the wines we simply love!
