After a first life in Paris and Singapore and a degree in oenology in Montpellier, Pauline Lapierre moved to Rions in 2017 with her family where she took over a vineyard on the beautiful gravelly slopes of Rions. These 7 hectares purchased from another winegrower had been organic for 10 years and Pauline chose to continue this story by creating her first organic wine.
When you walk in the rows of vines of Coulous, you have your feet in pretty red gravel and the view of the medieval village of Rions. This is the view on the label. The place is incredible and the grapes too, so we decided to intervene as little as possible during the vinification: no wood, just a short maceration in vats to reveal the purity of the fruit.
The red wine from the Coulous hillside (the cadastral name of the plot) is mainly Cabernet Sauvignon (60%) and Cabernet Franc (15%). Rather unusual for our region, which is largely dominated by Merlot!
Yes, but the hillside of Coulous has the particularity that it is composed of very beautiful orange gravel (large stones) and that it is sloping with a south/southeast exposure. In short, a very hot and pretty terroir where the Cabernets are very aromatic!
