THE ART OF ASSEMBLING During a tasting of the different barrels of the 2012 vintage, Julien Gil, a young winegrower in Pomas en Appellation Limoux (3.5 hectares), was guided solely by sensory pleasures and brought together two grape varieties never before blended. In order to tame the Cabernet Sauvignon tannin, he took the initiative to blend it with 5% white chenin. The magic works and the art of assembly then takes on its full meaning. "The wine receives the main dose of its perfume and a certain vigour of sensation from the Cabernet Sauvignon. White Chenin moderates the power of Cabernet without taking anything away from its fragrance and enhances its taste, making it more subtle". THE EXPRESSION OF A TERROIR In Occitan, PLÔ means "small tray". The one of the Grand Bâtard extends over a few acres of vines within the Plô Roucarels vineyard. Nestled in the hills of the Upper Aude Valley, under the sun of the South of France between Limoux and Carcassonne, the PLÔ terroir surprises. In the distance, the Pyrenees chain, almost unreal, paints a picture of a magical place, which leaves us dreaming... The vineyard (350 m. above sea level), due to its geographical position, benefits from an oceanic influence that moderates the Mediterranean climate of the region. Here, cool nights and hot summers cause temperature variations that are conducive to good grape maturity.
AN AIR OF SUPER TUSCAN Produced from vines planted with the LIMOUX protected designation of origin (50% Merlot minimum), this wine cannot qualify for the PDO label, because such a red and white crossing is non-compliant and illegitimate. Like some Tuscan winegrowers, we preferred to be deprived of the PDO label (Limoux) to make our ideal wine, almost 100% Cabernet Sauvignon (5% white chenin).
A STORY ABOUT FRIENDS
Julien Gil, the Master of the PLÔ, is a child of the country who, without chauvinism, has studied in the Médoc alongside great Bordeaux winegrowers. Julia, his wife, is from East Germany and proudly wears the winegrower's apron. Pierre Caizergues, at the origin of the Grand Bâtard project and a long-time friend, has travelled the world's vineyards to discover their wines and cultures.
