The attack in the mouth is rather sweet and caressing. The wine then expresses itself with lightness and suppleness. It offers a silky texture, due to the fine effervescence in the mouth. The dosage of liqueur is very tactful in dealing with the mutinous acidity of the wine. The whole is harmonious but nevertheless structured because we can guess some slight tannins in the middle of the mouth.
Like all clos en Champagne, the "Clos des Monnaies", by refusing the blending, asserts its personality. The delicacy of its floral fragrances and its "touch of mouth" make it a worthy representative of this exceptional family.
This wine should be served at a temperature of 10 degrees Celsius so that it can be opened properly. We also recommend to serve it in a well curved flute
At dinner, it looks towards the sea and will blend with the silkiest textures: think of scallops and fish quenelles for example.
