The champagne has a bright and fairly dense colour, of a light straw yellow colour with pale yellow gold and deep reflections in the glass. It is animated by fine and bright bubbles that feed a persistent flange. The visual sensation announces a rich and fresh wine. The first nose is fruity and spicy, evoking notes of apple, mandarin, quince, cumin, nutmeg, enhanced by accents of humus soil typical of our predominantly clayey soil. The aeration of Champagne reveals aromas of lime blossom and orange blossom accompanied by notes of fresh apricot, marzipan, blackcurrant, liquorice, evolving towards aromas of dried fruit, menthol, cinnamon, ginger. The palate is rich and fresh with a creamy and melted effervescence. Champagne develops a pulpy and coated fruity substance, supported by an acidity of mandarin and fleshy fruits. The mid-palate is orchestrated by a clay minerality that confers fruity volume, chewiness, with a certain greediness and salinity. The work in wood finely sewn with wine allows to accompany the mineral patina and to make the aromas breathe while respecting the freshness of the whole. The fruity and spicy finish is typically persistent in the middle of the palate, offering a mentholated return and a dry matter savourably salty.
