This wine has a brilliant, delicately pinkish golden colour. It has fine bubbles and a persistent cordon. The first nose is expressive of elderberry blossom with notes of white pepper and blond tobacco. The palate has notes of raspberry and red fruit, characteristic of the 2006 vintage and Pinot Noir. A supple finish, combining almond cream and young leather.

After optimal ageing in cellars, this wine can be kept for at least ten years in cool and dark conditions. As a result, it will become rounder and more complex.
Perfect with seafood, poached or grilled fish. But also very well suited to poultry such as capon, caviar or spicy dishes such as Indian tandoori. Serve between 8 and 9° C as an aperitif and between 10 and 12° C at the table.
The Maison Philipponnat is located in the communes of Ay and Mareuil-sur-Ay with 17 hectares of vines. One of the parcels stands out from the others because it is the steepest in Champagne (45°), enjoys a unique micro-climate (1.5°C above average) and a pure chalk soil: the Clos des Goisses.
