This Champagne has an elegant pale gold color and a discreet and complex bouquet that offers toasted and fruity aromas. Its mouth is subtle and prolonged by a good balance. It is recommended to drink it as a wine, that is to say in a wine glass or wide champagne glass where the aeration will be done slowly after opening. We recommend a serving temperature of 10°C.

Champagne Ponson

The vineyard of Champagne Ponson is only located on the "Premier Cru" villages of "La Petite Montagne" of Reims (vineyard facing Reims). The clay-limestone soils with a more or less important depth depending on the altitude, make this hillside an ideal place for all the Champagne grape varieties. Committed to different approaches of respect for the environment, our vineyard is almost entirely grassed and totally worked with the plough, the objective was to give life back to our soils so that they deliver all their secrets. Seven years later, during the ploughing, the birds follow us to feed on the fauna that has colonized these soils (earthworms, diptera, beetles...). From this work we entered in a virtuous circle, because the organic matter offered by the vineyard has to degrade, which makes that we bring more mineral fertilizers which pollute. The grassing has lowered the yields to offer us grapes with more matter and therefore more taste. To sublimate these grapes we have decided to organize, during the harvest, three stages of quality control before they enter the press. We have opted for a vinification in a neutral container of any external aromas, limiting the pumping and reducing the oenological inputs. Thus, our Champagne will tell you the story of its Terroir.
