The colour is straw yellow with golden reflections. The effervescence is fine with a slight cordon of foam. The nose is generous and complex, it goes from pear to quince and acacia, extending over roasted dried fruit. The attack is ample, round, with fruity flesh. The balance between vinosity and acidity is seductive, as is the persistence of the finish.
The refinement of this Champagne will make it the ideal companion for your gourmet meals as well as your dinners.
Serve between 4 and 10°, with refined cuisine, shellfish and seafood.
On pike quenelles with Nantua sauce or red mullet.
