The colour is magnificent, golden yellow with luminous serine reflections, bright and brilliant. The nose is delivered with a beautiful sweetness around white fruits (quince) and yellow fruits (plums and mirabelles) cooked almost caramelized, a touch of milk caramel, a touch of honey and a hint of vanilla and spice from its barrel ageing. The attack on the palate is full, rich and dense, with a pretty network of tannins that energize the finish.
A wine that is both round and mineral, with a very fine balance.
Serve between 8 and 10°C. This wine will evolve over a minimum of 10 years.
The wedding will be perfect with: - grilled fish or with a creamy reduction sauce. - creamed white meats, veal sweetbreads, truffled white pudding - pan-fried scallops with a creamy Coteaux du Layon reduction sauce - noble crustaceans - hard cheeses
