Dry wine, slightly mineral. Nose and oxidative aromas. A wine open to a complexity of dried fruits (nuts...) and mushrooms. Powerful by its aromas, round and very long in the mouth, always in harmony. The aromas persist in the nose for a very long time, inevitably changing the perception of the dish you are tasting. To be enjoyed at 17°C after at least 3 hours of aeration.
Wine of all superlatives. "The exception" sums up as much its 6.5 years ageing in barrel (a little more here...) under veil, its keeping, its aromas and its length in the mouth. A unique wine that you sometimes have to learn to love. The Gold of the Jura! Our yellow wines have been the subject of a very successful tasting...
With a theoretical storage period of 100 years or more, and a storage period of several months once opened, we are already in a class of our own. Just like its Clavelin 62cl bottle, inherited from its history and its unique breeding. The wine of the Kings, the king of the Wines... A wine for special occasions and great cuisine, but also for local and family cuisine, very local.
Indispensable on a chicken with morel mushrooms in a Yellow Wine sauce. Wine/Cheese pairing (Comté, Cantal, Bleu de Gex...). At the end of cooking it will sublimate all your cream sauces (scallops, turbot...) served with a risotto with boletus mushrooms; on Asian cuisine.
C'est la première fois que je déguste un vin jaune et il était tout bonnement incroyable, un nez de folie, surprenant ! Je le recommande vivement au moins pour l'expérience !
