A gastronomic white wine ! Nowadays, it is present on the beautiful French and Japanese tables (Arpège, Ducasse, Taillevent, Rebuchon), aged 30 months in demi-muids (5 and 600 litre barrels) and 1 year in bottle.
For beautiful gastronomy, i.e. complex pallets to marry, with bitters, salt-sweet and of course Cheeses!
I am thinking of fresh or fried foie gras, asparagus mousse, sweet and wour Asian cuisine, desserts but not too sweet.
