Château de Chaintres - Terre St Cyr - Rouge - 2019

Nose : Ripe and fresh cherry, red and black currant. Taste: Explosive fruit, soft but well defined tannins. Elegant and mineral finish. Beautiful acidity from start to finish. This cuvée is born from a "Fermage" type principle where the Château does not own the land but manages the vineyard, the agricultural follow-up, the work of the soil, the grass, the vines. Manual harvesting in small open boxes (25 kg), manual sorting in the vineyard, then on a sorting table at the reception. Complete de-stemming, 10-12 days maceration, fermentation in thermo-regulated stainless steel tanks with wild yeasts (indigenous) at 18°C, finishing at 24°C to keep the elegance. Aged 5 months in stainless steel on fine lees. Light filtration as needed.

Strict specifications followed until the harvest, made by the teams of the Château under the eye of its Winemaker and Oenologist Jean-Philippe Louis who leads the Château towards the conversion to Biodynamics and the certification of these parcels.
