Château de Chaintres - terre de st cyr - Rouge - 2019

Nose: Ripe and fresh cherry, red and black currant. Palate: Explosive fruit, supple but well-defined tannins. Elegant and mineral finish. Beautiful acidity from end to end. This cuvée was born from a principle of "Fermage" where the Château does not own the land but manages the vineyard, the agricultural follow-up, the work on the soil, the grasses and the vines. Hand-picked in small open crates (25 kg), sorted by hand in the vineyard, then on a sorting table at reception. Complete de-stemming, maceration for 10-12 days, fermentation in temperature-controlled stainless steel vats with wild (indigenous) yeasts at 18°C, finishing at 24°C to preserve elegance. Maturing for 5 months in stainless steel on fine lees. Light filtration as required.

Strict specifications are followed right up to the harvest, carried out by the Château's teams under the watchful eye of its Winemaker and Oenologist Jean-Philippe Louis, who is leading the Château towards the conversion to Biodynamics and the certification of these plots.

The Wine Estate

Château de Chaintres is a 17th century manor house located in the heart of the Saumur Champigny appellation. The vineyard extends over about twenty hectares, including the famous clos du Château, which is an exceptional and unique size in the appellation (nearly 18 hectares).
