Manual harvest from the micro-terroir of Mérande. The whole bunches are gently placed in vats where they will ferment for several weeks, in the traditional way, with a light crushing at the feet from the 2nd week. Aging on fine lees in 500L barrels for 24 months.
A wine for ageing, very concentrated, which will refine and round out over time.
Hare stew with fresh pasta, doe steak or a beef cheek puff.
