All our Crémant are hand harvested, the grapes are brought whole to the press. The Grand Eminent are exclusively Brut and made from the first juices of the press. They benefit from an ageing on laths of more than 36 months. During the vinification we control the temperatures for a slow fermentation. The descent of the wines is done by gravity.
