In 96 AD, the Emperor Domitian had the vines uprooted for the benefit of wheat cultivation. It was in the 3rd century that Emperor Probus had the vines replanted in Quercy. It was to pay tribute to him that Jean, Jean-Luc Baldès' father, created this top-of-the-range cuvée in 1976.
To be enjoyed today, and to be kept for up to 15 years.
We keep Probus vintages at the estate, in our cellars at the right temperatures, so that you can discover and enjoy our vintages when they are ready!
To be enjoyed after a period in a carafe and will be appreciated now and again after a few years of ageing around culinary specialities from the South-West such as confit or duck breasts, prime rib of beef and cheeses etc...
