Carbonic maceration of Cab-Sauv, the whole bunches are placed in a concrete tank. Under the action of CO2, a first fermentation takes place inside the berries until they burst, releasing the juice. A second fermentation takes place in stainless steel tanks at low temperature. This juice of Cabernet-Sauvignon is then blended with Semillon from a short skin maceration.
