The word of the Winemaker, Richard et Stéphane Martin :
It is an old small local construction quarry, located at the entrance of the village of Davayé, which gives its name to the cuvée. The parcel is located in overhang and the soils are indeed particularly calcareous. The result is a mineral and complex wine. The ageing in barrels only magnifies it, by conferring it all fluidity in mouth.
