In the heart of the Chalonnaise coast, located between Mercurey and Rully, the Tour Saint-Hilaire estate enjoys an exceptional view, between vineyards, meadows and forests. A historical property with a long history, this unique property offers a 360° view of the Burgundy vineyards, stretching from the Côte de Beaune to the Mâconnais mountains.
The farm consists of one hectare of chardonnay planted on a clayey-limestone soil. This clay-limestone soil has the particularity of having a base of kimmeridgian rocks. This typicality is found in Chablis. It is in 2014 that Luc Cadel, Valentin's father, will start working the vineyard. Far from owning his land, he finally succeeded in becoming the owner of the land. He now owns 80 hectares of forest and quarry.
Enjoying the southern sun on the hill of Saint Hilaire, our vines are isolated in the middle of forests and fields. The vines are cultivated on a clayey-limestone soil mixing Upper Oxfordian and Kimmeridgian. The estate offers a 100% Chardonnay grape variety.
The vines are overlooked by the Saint-Hilaire tower built in 1862, from which the Virgin dominates and protects. The bell inside has particular virtues. Legend has it that any young girl who comes on Easter Monday to ring the bell 3 times will get married in the year.
