A vermeil wine, with a nuance ranging from pure ruby to black tulip and often sustained. A fiery red colour, sometimes reaching as far as garnet, pulling on dark purple. The ripe fruit on a spicy background is the most common bouquet, with strawberry and raspberry, blueberry and blackcurrant. This complex of melted and refined aromas evolves with age towards cherry and brandy, candied fruit, leather and fur, and game that has returned from hunting in the woods. On the palate, velvety and distinguished, we find the fullness of the Pinot Noir of the Haute Ecole. A wine to keep, of course, balancing richness and tannins, texture and architecture under a well removed attack. The base may seem austere in its youth: it must develop its structure and fat in the bottle. Often full-bodied, a Rubens nude, voluptuous and out of its frame.

The "pearl in the middle of the Burgundy necklace" contains fabulous Grands Crus: Romanée-Conti, Romanée Saint-Vivant, La Romanée, La Tâche, La Grande Rue, Richebourg and the neighbouring commune of Flagey-Échezeaux, Échezeaux and Grands-Échezeaux. How ?

Beautiful roasted poultry, patiently roasted lamb and roasted feathered game will be preferred by far. But a lean, firm steak of beef on the palate will find a round answer. Given its presence, it can be associated with cheeses with intense flavours such as epochs, langres, St. Florentine, ashen aisy but also cîteaux.
