Intense garnet-colored, the nose opens with aromas of candied cherries, then evolves into spicy notes. The palate gives the amplitude of a Pommard de garde with present but nevertheless supple tannins.

In Burgundian dialect, the 3 Follots means the 3 almond trees. And indeed, the rising sun orientation gives the grapes of this plot a very beautiful maturity, guaranteeing great complexity on the palate.

The estate is managed according to the criteria of organic viticulture, with, in particular, a very careful work of the soil (replacing chemical weed killers). The vineyard is spread over 10 appellations and 29 different plots, mostly planted with Pinot Noir (7.5 ha), Chardonnay and Aligoté (2 ha).The vines are on average 40 years old, and on some parcels up to 65 years old (Pommard 1er cru les Rugiens).an original vinificationAt Domaine Lejeune, the vinification of the reds is based on the principle of whole bunch maceration. The grapes are carefully sorted, crushed and vinified in large wooden vats at the time of harvest. This vinification technique develops very complex aromatic palettes, around the black berries, magnified by sweet spices scents.the Pommard and Pommard 1er Cru are rather destined to be kept, while the Bourgogne Rouge de plaine provides tasters with a more immediate pleasure.the whites are vinified "à la Meursault", i.e. settled in vats and then tapped directly for fermentation in small volumes (1 piece = 228 liters), which allows a great control of the vinification temperatures.MaturingThe great wines for ageing are matured for up to 22 months in oak barrels.The Bourgognes de plaine and the white wines are matured for 12 to 14 months in oak barrels, without racking, in order to preserve the fruity side of these appellations.The bottling is done at the domainIn order to complete the range proposed by the domain, I created and developed a wine merchant activity in 2008, which allows me to select and buy grapes, at the time of the harvest, to vinify and mature them.
