Domaine Sérol is 28 hectares of vines that Stéphane and Carine Sérol work in a fragmented way to enhance the terroirs of the roannaise region. A wine, a character. From the most juicy to the most lively, one thing is certain: the precision with which this couple works will not be enough to make us salivate!
In 1998, Stéphane Sérol took over the management of the estate from his parents Robert and Marie-Thérèse, who had themselves devoted it to grape growing. Stéphane values the pretty slopes and chooses a winemaking method that is as close as possible to the grape by converting the estate to organic farming.
In the vineyard, we feed our vines with organic matter and lime. Once at optimal maturity, we hand-pick and carefully sort each bunch! In the cellar, you will find concrete vats and some wooden truncated cones where we vinify each plot separately. We work with indigenous yeasts, already present in the grapes.
