Like a "grand cru", it can be kept for 8 to 10 years. It is a wine to be discovered over the years because its evolution is very interesting. In the first years, it is mainly the fruit of the Sauvignon that expresses itself with a more discreet "terroir" side. As time goes by, everything becomes homogeneous, the terroir expresses itself, the Sauvignon evolves and gives us a more complex and unfortunately rare aromatic palette.

The word of the Winemaker, :

This cuvée comes from Kimmeridgian marls, recognizable by the thousands of small comma-shaped oyster shells (ostrea virgula), and benefits from a very nice East/North East exposure.

The Wine Estate

The actors of the great turning point in the history of the Chollet family were Roland Chollet and his wife Simone. Starting from nothing, they created the Domaine Chollet.nThen in 1980, Gilles Chollet, his son, joined him at his side. nFrom 2010, following his studies in Beaune, Séverin, their son, has been working alongside his parents Gilles and Valérie, bringing a touch of modernity.n RESPECT FOR LIFEn" Being in harmony with one's vines and favouring practices that respect the life of the soil, the equilibrium of the plant and the environment.
