The word of the Winemaker, :
The ovoid tanks are made of pure concrete to ensure natural micro-oxygenation. The absence of metal reinforcement means that the ionic movement of the wine's natural constituents is not disturbed. The ovoid shape induces a movement (vortex) that keeps the lees constantly in suspension. The result is greater roundness, complexity and suppleness.
