The palate is surprising as the wine brings divergent sensations with bright fruit, a velvety, fine texture, and a sensation of freshness despite a hint of sweetness. All this on a sapid base and melted tannins.
The word of the Winemaker, France Crispeels :
Grapes harvested on September 23rd and 24th with a delicate maturity of tannins. Grapes destemmed at vatting. Indigenous yeasts. Co-fermentation of the grapes. Skin contact maceration for 3 weeks. Gentle vinification, to bypass the tannins.
The wine was aged for 2 years in concrete tanks to finish its sugars, until it had only 54 grams! Vinified and aged without sulfites.
