The spicy aromas (cinnamon, pepper, juniper) are associated with red fruits, leather and a certain minerality (graphite, smoke). The palate is quite lively, remains round thanks to the fleshy tannins and the softness of maturity.

Nose of fresh liquorice, root, undergrowth, fresh spices (cade and sandalwood), the structured mouth will call for rich, fatty (candied or delicatessen) or protein-rich food (bleeding meats). As for cheeses, an époisses, munster or any other speciality with a grated rind.
