All our winemakers in LoireTouraine, the favourite region of Balzac as can be seen in his famous novel Le Lys dans la Vallée, is also a wine-growing region where you can find the AOC Touraine which extends over the Loire Valley and in particular over part of the departments of Indre-et-Loire and Loir-et-Cher.
The vineyard extends over approximately 4000 hectares and is supported by soils of variable constitution. They are locally called "aubuis" and "tufs" when they are clayey-limestone, and "parakeets" when they are clayey-siliceous. Approximately 220200 hectolitres of wine are produced each year.
From a climatic point of view, the vine is influenced by the ocean to the west and by the continent to the east. This varied climate as well as the different grape varieties planted: chenin, sauvignon, arbois and chardonnay for the whites and gamay, cabernet franc, côt and pinot noir for the reds and rosés make it possible to produce very varied wines (red, white, rosé and sparkling) but which have in common to be very fresh and very fruity. These characteristics are due to the technique very often used in Touraine, which consists in favouring short vinification and cold maceration.
During the tasting, you will be able to observe that the red has a cherry or ruby colour while the white Touraine will have a pale yellow tint. A very lightly coloured colour, in pale pink tones, will be characteristic of rosés. On the nose, different flavours will reveal themselves to you. Red fruit notes will tickle your nostrils if you taste a red Touraine, while lemon, broom, honeysuckle and exotic fruits will surprise you for the white. The sparkling wine releases aromas of brioche, green apple and honey and finally the rosé will allow you to travel thanks to its spicy notes. Your mouth will be light and delicate for rosé wines, light and straightforward for reds and aromatic and lively for white wines.
But with what should the wines of this appellation be served? The clusters have concocted a menu from A-Z for you to avoid any mistakes. As an aperitif, we suggest you to break the cork of a sparkling Touraine and to accompany it with appetizers such as toast with rillettes de Tours or honey goat cheese toast. As a starter, you can offer your guests asparagus with cream and cold cuts with a white Touraine cheese. For the dish, Touraine rouge will go very well with exotic cuisine. For the cheese, a white will be perfect. And for dessert finally, don't hesitate to open a bottle of sparkling wine again, it will end the meal on a festive note and will bring everyone together.
