Symbol and emblem of the Maison Fleury, the 2011 Sonate vintage has been vinified without suffering to preserve fine aromas of intense white fruits from the Chardonnay that composes it and notes of small black berries subtly spiced. It comes from the very beautiful plots of Courteron and vines already nearly 40 years old. Vinification in vats (55%) and half in oak barrels (45%). Malolactic fermentation is carried out, bringing roundness and complex aromas to the tasting. With less than 1g/l in dosage, the finish is light, precise, authentic and long.
Sonata 2011 Extra Brut: Pinot Noir (60%) and Chardonnay (40%) for an "infinite farandole of heady aromas (...). A remarkable length in the mouth" for this cuvée without added sulphur. GUIDE VERON DES CHAMPAGNES 2018
