In the heart of the Côte de Beaune, François de Nicolay, at the helm of Domaine Chandon de Briailles, manages the vineyard biodynamically, with constant attention to soil balance and precise ripeness. This approach aims to preserve the natural expression of the terroirs, without seeking artificial effects or technical over-elaboration.
The Pinot Noirs are vinified with gentle extractions, prioritizing fine texture and fruit purity. The wines exhibit elegant profiles, characterized by clear red fruit and a balanced persistence, with integrated tannins and great clarity. The aging processes remain understated, designed to support the structure without dominating the wine.
The white wines, produced in smaller quantities, display a restrained mineral tension and a linear texture, true to the soil identity of the Côte de Beaune. The entire production process is distinguished by a deliberate restraint and great precision.
