In the Puy-de-Dôme region, Patrick Bouju produces wines under the name La Bohême, using natural practices and relying on Gamay, Pinot Noir, and old grape varieties that are being gradually brought back into cultivation. The vines, often quite old, are planted in volcanic soils characteristic of the area, which impart a subtle energy and a unique character to the wines.
The winemaking process is carried out with minimal intervention, allowing fermentation to proceed freely in order to preserve the spontaneous expression of the grapes.
