This wine is made from 45-year-old Pinot Noir vines in Auvergne, grown on the Madargue plots, a marl-limestone terroir. This cuvée is produced using biodynamic methods with animal-drawn plowing and undergoes meticulous vinification, including whole-cluster maceration for two years in stoneware amphorae and oak barrels. A subtle, delicate wine with incredible freshness from the first sip to the finish! A truly wonderful experience!

In Puy-de-Dôme, Patrick Bouju crafts wines under the name La Bohème, employing natural practices, using Gamay, Pinot Noir, and ancient grape varieties that are gradually being reintroduced into cultivation. The vines, often old, are planted on volcanic soils characteristic of the region, which impart a subtle energy and unique character to the wines.
Vinifications are conducted with minimal intervention, allowing fermentations to proceed freely to preserve the spontaneous expression of the grape.
