Château Guilhem
Located in Malviès, between Limoux and Carcassonne, Château Guilhem has been a family estate since 1878, now run by the fifth generation. The estate covers approximately 35 hectares of vines, cultivated organically, grouped around the property and backing onto the Malepère massif, in western Languedoc.
This area stands out from the rest of the region due to its cooler climate, influenced by its proximity to the Pyrenees. This distinctive characteristic is reflected in the estate's grape varieties, deliberately chosen for their Atlantic influence: Merlot, Cabernet Sauvignon, and Malbec. This selection gives the wines a unique profile within the Languedoc landscape, often referred to as "the other Languedoc," where freshness and structure take precedence over intense sunlight.
Soils play a central role in the balance of wines. The Malepère massif takes its name from a friable rock, unsuitable for construction but particularly well-suited to vines. These soils retain water in winter and release it gradually during the summer, limiting water stress and promoting even ripening of the grapes. This natural reserve helps preserve aromatic freshness and the finesse of the balance, even in hot vintages.
In the cellar, winemaking aims for clarity and honest expression. Extractions are carefully measured to preserve supple tannins and an elegant structure, while aging is designed to complement the wine's character without masking the terroir's identity. The wines are characterized by structured yet approachable profiles, driven by pure fruit and a beautiful length on the palate.
