Located in Malviès, between Limoux and Carcassonne, Château Guilhem has been a family estate since 1878, currently managed by the fifth generation. The domain encompasses approximately 35 hectares of organically cultivated vineyards, clustered around the property and situated against the Malepère massif, in the western Languedoc.
This sector clearly distinguishes itself from the rest of the region by its cooler climatic influence, linked to the proximity of the Pyrenees. This particularity is reflected in the estate's varietal composition, intentionally featuring Atlantic-inspired grape varieties: Merlot, Cabernets, and Malbec. This choice bestows upon the wines a unique profile within the Languedoc terroir, often referred to as 'another Languedoc,' where freshness and structure are prioritized over solar intensity.
Soils play a central role in the balance of wines. The Malepère massif takes its name from a crumbly rock that is unsuitable for construction but particularly well-suited to vineyards. These soils retain water in the winter and release it gradually during the summer, limiting water stress and promoting even ripening of the grapes. This natural reserve helps preserve the aromatic freshness and finesse of the wines’ balance, even in hot vintages.
In the cellar, winemaking focuses on clarity and authenticity of expression. Extraction is carefully controlled to preserve supple tannins and an elegant structure, while aging is designed to enhance the wine’s character without masking the terroir’s identity.
