In the Côte Roannaise, Domaine Sérol is managed by Stéphane Sérol, who took over the family estate in 1998. The vineyard now spans approximately 28 hectares, situated on the volcanic slopes of the Roannaise region, a geological context that imparts characteristic tension and freshness to the wines.
The estate is managed using organic farming practices, with meticulous soil management based on organic matter and lime amendments, to maintain the vitality of the vineyard and the balance of the vines. Harvesting is done manually, with rigorous grape sorting, ensuring the collection of optimally ripe grapes.
Winemaking is carried out on a plot-by-plot basis, with each cuvée processed separately to bring out the nuances of each terroir. The winery is equipped primarily with concrete tanks, supplemented by a few truncated-cone wooden vats. Fermentation takes place using indigenous yeasts, without any attempts at correction, in an approach that remains faithful to the raw material.
The wines span a range of styles, from juicy, approachable profiles to more lively and taut expressions, all built on precision and clarity.
