In the Côte Roannaise, Domaine Sérol is run by Stéphane Sérol, who took over the family estate in 1998. The vineyard now covers approximately 28 hectares, located on the volcanic slopes of the Roannaise region, a geological context which imparts a characteristic tension and freshness to the wines.
The estate is managed organically, with careful soil management based on the addition of organic matter and lime, to maintain the vineyard's vitality and the vine's balance. The harvest is done by hand, with rigorous sorting of the bunches, ensuring that the grapes are picked at optimal ripeness.
The winemaking process is carried out plot by plot, with each cuvée crafted separately to reveal the nuances of each terroir. The winery is primarily equipped with concrete tanks, supplemented by a few truncated conical wooden vats. Fermentation occurs using indigenous yeasts, without any intervention, in an approach that remains true to the raw material.
The wines encompass a range of styles, from juicy and approachable profiles to more vibrant and taut expressions, always built on precision and clarity.
