This cuvée comes from a plot planted by Stéphane Sérol and is distinguished by meticulous work on granite soil in the heart of the Oudan hillside. The vines, planted at high density, benefit from a south-facing exposure, ideal for early ripening of the grapes. Each step, from the manual harvest to the 11-month aging in truncated conical wooden vats, is carefully considered to respect and reveal the potential of the terroir, further enhanced by rigorous selection in the cellar.

Our opinion on the vintage

At first glance, the translucent garnet robe with its violet reflections promises a rich and complex sensory experience. On the nose, aromas of candied black fruits intertwine with notes of stem and a hint of smoky minerality. On the palate, it is a harmonious revelation: delicate energy carries an airy, elegant structure, punctuated by pure fruity sensations. The finish evokes a mineral landscape, where flavors of blackberry, violet, and toasted slate mingle, concluding with a fine and flavorful chewiness. Perfect to accompany a beef or game bird dish, it reveals its full depth when paired with aged cheeses.

In the Côte Roannaise, Domaine Sérol is run by Stéphane Sérol, who took over the family estate in 1998. The vineyard now covers approximately 28 hectares, located on the volcanic slopes of the Roannaise region, a geological context which imparts a characteristic tension and freshness to the wines.

The estate is managed organically, with careful soil management based on the addition of organic matter and lime, to maintain the vineyard's vitality and the vine's balance. The harvest is done by hand, with rigorous sorting of the bunches, ensuring that the grapes are picked at optimal ripeness.

The winemaking process is carried out plot by plot, with each cuvée crafted separately to reveal the nuances of each terroir. The winery is primarily equipped with concrete tanks, supplemented by a few truncated conical wooden vats.
